This is one of our favorite grilling time vegetable dishes. It can be made using any root crop vegetable and / or winter squash. It can be seasoned with Greek Blend
(our favorite), Moroccan Spice Blend
and the Mexican Rub.
A mixture of:
Onions
Potatoes
Sweet potatoes
Winter Squash
Carrots
Wash, peel and cut vegetables to equal size.
Pat dry.
Toss with olive oil to coat.
Coat with spice blend of your choice either by tossing in a bowl or spreading vegetables on a cookie sheet and liberally shaking over them.
Place on upper rack of grill or bake at 450 for 40 minutes or until vegetables are tender.
Serving Suggestions: Straight out of the oven. With Feta Cheese. With Balsamic Vinegar
