Whole Grain Mustard
Makes @ 1 cup
1 packet Mustard Seed Mix
1/2 cup cider vinegar
1/4 cup beer, wine or alcohol (depending on taste)
3/4 teaspoon salt
2 teaspoon packed light brown sugar (honey, molasses, sweetener of choice) (sweeten to taste)
Combine mustard seeds, vinegar, and beer/wine. Cover, and let stand at room temperature for 8+ hours. The longer you let it soak the spicier.
Process soaked mustard seeds with salt and sweetener in food processor until coarsely ground and thickened, @ 1 minute.
Keeps up to 3 months when refrigerated.
